Chicken Enchiladas

When Marcel is in the mood for making dinner, I step aside and let him work his magic. He generally does not use recipes but whips something up based on what is available in our garden or refrigerator.

This one is a classic and comes out a little bit different every time he makes them. The flavor is based on TJ’s Enchilada Sauce – hardly a secret but fresh herbs and onions from our garden made it extra special. By the way, we don’t have a problem using ready-made stuff. We just make sure it is mostly natural or even organic.

From what I saw, these are the steps:

1. Fry corn tortillas in oil.

2. Saute onions with diced chicken flavored with salt, pepper, cumin, onions, other spices as desired.

3. Arrange the tortillas with the chicken on a baking dish.

4. Sprinkle with diced tomatoes and grated cheese.

5. Pour enchilada sauce.

6. Bake for 20-30 minutes. Sprinkle with chopped cilantro before serving.
