Buttermilk Pancakes
I found a good recipe for buttermilk pancakes. I usually make pancakes from a 365 Mix (Whole Foods Market). This recipe yields light and fluffy, melt-in-your-mouth pancakes. I’ve adapted the recipe to suit our 2-person household below:
1 cup buttermilk
3 tbsps. butter
1 egg
3.3 ounces flour (3/4 cup)
0.12 ounces baking soda (3/4 tsp)
pinch of salt
Mix everything together until wet but lumpy. Cook in a hot skillet (medium setting on my gas stove). I also timed each one to be two minutes for the first side and about 30 seconds for the second side
Serve with real maple syrup. Enjoy!
